As you can see I am trying to cook fish again – even though I have always been scared to cook fish I am shocked how easy it has been for me

No horrible disasters ….yet…. I always have to put a yet in there

This is one of those recipes where I thought ” you know what this should work …. and it TOTALLY did”Β  This recipe is SUPER easy to make – I did decide to fry the popcorn shrimp since I knew it would crisp up nicely but I have not tried to bake them – though I am sure it would work I just do not know about the timing

This is everything you need, you will notice that there is no salt — that is because the Parmesan cheese has enough salt in it PLUS Old Bay seasoning has salt already in it πŸ™‚

I went with fresh shrimp – you can use frozen I just like to work with fresh. If you decide to go fresh make sure to get the EZ Peel shrimp – also make sure to take all the tails off the shrimp

Easy Popcorn Shrimp Recipe

Ingredients

  • ½ Pound of Shrimp - deveined and clean
  • 1 Cup of Panko Breadcrumbs
  • 2 Teaspoons of Old Bay seasoning
  • ½ teaspoons of pepper
  • ¼ Cup of Parmesan Cheese
  • 1 Egg - Whisked
  • Garnish - Parsley chopped and Lemon Slices
  • Cooking Oil

Instructions

  1. In a skillet pour cooking oil - you want 1 inch of oil - heat over medium/high heat -
  2. Take one bowl and whisk the egg
  3. Take another bowl and combine well - panko, old bay seasoning, parmesan cheese, and pepper
  4. Take each of shrimp and place into the egg then into the panko
  5. Fry each shrimp until the panko is lightly brown and shrimp is pink/ red ( a couple minutes each side)
  6. Place each cooked shrimp on a towel to soak up the excess shrimp --- garnish and serve
