Recipe: Coconut Lime Chicken with Chiles With A Twist Of Curry Over Rice

 

My hubby is still talking about how yummy this recipe was and I am still talking about how EASY it was to make πŸ™‚

Coconut Lime Chicken with Chiles With A Twist Of Curry Over Rice

Ingredients

1 lb boneless –Β  skinless chicken breasts or you can use thigh meat …cut into cubes
3 cloves garlic minced

Salt and Pepper

Juice from 1 lime
2 tsp curry powder ( I love using hot curry powder)
1 14 oz can coconut milk
1 4 oz. can diced green chiles
1/4 cup green onion, chopped
2 tbsp fresh cilantro, chopped

Oil

Rice

Directions

( Make sure y’all are cooking the rice before starting the chicken πŸ˜‰ )

1) Heat up oil in a pan

2) Cut the lime and add half the lime juice and chicken and garlic into the hot pan

3) Cook until chicken is brown like the picture below

4) Add Curry Powder and stir for a minute

5) Add Milk, chiles and stir – bring to a simmer and let simmer for 5 more minutes.

6) Stir in the onions and cilantro

7) Serve over rice and enjoy πŸ™‚
