When I stumbled upon this recipe I could not wait to try it out! This is Walt Disney’s personal Chili with Beans recipe π Best part it was naturally gluten – free and I was able to enjoy it. Now this recipe is a little labor intensive but it is kinda neat to make such a special recipe. I did some slight modifications to the recipe in terms of proportions of ingredients.
What You Need
1 lbs dried chili beans (pink or red)
2 medium onions , sliced (about 1 1/2 cups)
Β½ cup cooking oil
2 garlic cloves , crushed
2 lbs coarse ground beef
1 teaspoon dried thyme
1 (28 ounce) can whole tomatoes

1 cup chopped celery
1 Tablespoon chili powder
1 teaspoon paprika
salt
What To Do
1. Wash and sort ( making sure there is only good beans in the mix π )Β beans and soak overnight in cold water. You really cannot miss this step
2. Drain beans and place in a 2 quart saucepan. Add fresh water to cover by 2 inches. Add sliced onion and simmer, covered for 2 hours until tender.
3. Heat oil in a large pan and sauteβ garlic. Add beef and celery and cook until lightly browned. Add chili powder, paprika, and thyme. Mix in chopped tomatoes. Cover and simmer for 1 hour.
4. When beans are tender, combine with meat, stirring gently. Add salt and pepper to taste.
