What You Need
1.5 lbs fresh crisp asparagus – ends cut
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon lemon zest
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
Pinch of salt
1/4 teaspoon of pepper
1 tablespoon chopped fresh Italian parsley
4 ounces crumbled feta cheese
1 lemon – juiced
What to Do
Preheat oven to 400
Heat oil in a large skillet – add lemon zest, oregano, red pepper flakes, and garlic – cook for 4 minutes.
Turn off heat – add asparagus – make sure it is lightly coated with oil mixture
Lay on a baking sheet and sprinkle feta on top – cook in the oven for 12 minutes
Drizzle lemon juice and parsley on top
