What You Need
1 Pound of Rotini Pasta
1 Pound of Asparagus – Cut into 1.5 inch bite size pieces
Salt
Pepper
1 Teaspoon of Lemon Juice
1 Tablespoon of Fresh Tarragon minced
1 log of goat cheese
What to Do
Cook pasta — about 4 minutes before the pasta is done cooking add the asparagus ( this helps saving time)
In a small bowl – combine tarragon, goat cheese, lemon juice, plus pinch of salt and pepper
Drain pasta/asparagus ( make sure to save about 1/2 cup of pasta water)
In a large bowl combine water, goat cheese mixture, pasta/asparagus — mix for about 1 minute then serve!
This dish is great hot or cold 🙂
