Addicting Zesty Corn Dip Recipe

Fall and Winter are known for family gatherings – so I am trying out as many recipes I can that are easy to make – try and be allergy friendly and cost effective

Finding a recipe that hits all those marks is really hard to do – but I have to say this recipe really hits the bill

I love how creamy the dip is — and there is TONS of tang to the dish as well — love the hint of cilantro

If I could get ahold of a time machine – I would remake this recipe and add in about 2 teaspoons of lime juice and a bit of lime zest – just for that extra push 🙂

This is everything you need – I heated everything together on the stovetop took under 10 minutes to put everything together – my dad and mom really liked the dip both hot and cold but Eric thought it only really worked when it was warm

I personally liked it both ways

This recipe is naturally gluten free – I ended up using pita chips in the final picture ( my dad’s choice) but I think you can serve this dip with gluten free tortilla chips and it would be great!

Addicting Zesty Corn Dip Recipe



  • 1½ Cans of Corn ( Drained)
  • 8 oz of light cream cheese
  • 1 jalapeno - diced (seeded)
  • ½ Cup of Cheddar Cheese - shredded
  • cilantro
  • 4 oz of diced green chilies


  1. In a skillet - med/low heat - combine - cream cheese, corn, jalapenos, cheddar cheese, and chilies
  2. Allow to heat for a few minutes - once the cream cheese has melted a good deal - fold everything together in the pan
  3. Add a pinch of cilantro and mix
  4. Place in a bowl - top with some cilantro and corn
  5. Enjoy
