I want to write a song about my love for brown butter. It is pretty much the best flavor in the world. Pair this with cheese and you are in heaven.
Brown butter has been my secret weapon for years and I think it is time that I tell you one of my best recipes – this is perfect recipe to get your kiddies to eat veggies.
I normally use parmesan cheese to pair with the brown butter ( feel free to do this combination as well) – but I was inspired to change it up a bit.
I was at the Old Spaghetti Factory with my parents and of course I ordered my favorite – mizithra pasta ( mizithra is a greek goat cheese that you can buy at Whole Foods or similar places). It is salty and pairs amazingly well with the brown butter. However, parmesan cheese will work as well. But if you can get a hold of some Mizithra I suggest you use this cheese.
Yep this is ALL that you need. This is why it really is the perfect side. Once you make brown butter you can keep it in the fridge and just heat up and use. You can have a side ready in a couple of minutes. You can even use frozen cauliflower.
This is what brown butter looks like when it is just made. It has a great nutty quality to it.

Brown Butter and Cheese Cauliflower Recipe
- 1 Cup of Butter
- 1 Cup of Cheese ( shredded - either mizithra or Parmesan)
- 2 Cup of Cooked Cauliflower
- How To Make Brown Butter
- Heat butter in a sauce pan over medium heat. Keep the butter moving - it will start to foam up after 8 - 10 minutes keep going until the butter is brown and you can smell a nutty scent. Pour the butter into a heat safe dish.
- Pour about ½ Cup of butter over the cauliflower - top with cheese
