If you did not know I am Irish and with being Irish I have always been fond of the potato ๐Ÿ™‚ I love how inexpensive it is and yummy all at the same time. This recipe has been a staple in my kitchen for years. I try not to load it with fat and calories rather flavor ๐Ÿ˜‰ — oh and a bunch of cheese….

What you Need:

  • 1 sticks butter
  • 3.5 poundsย  Yukon gold potatoes ( I grab them when they go on sale)
  • One 8-ounce package cream cheese, softened
  • 1/2 cup of milk
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon black pepper
  • 1/2 cup of Parmesan Cheese

What to Do:

Preheat the oven to 350 degrees F. Butter your 8×8 Baking Dish ๐Ÿ™‚

Cut the potatoes into 1/4ths – I leave the skin on you can peel them if you like.

Boil water in a stockpot and give your potatoes a bath!

ย Leave them for about 20 minutes – test the potato by sticking a knife in it – IF the potato is tender then you know they are done ๐Ÿ™‚

Drain potatoes – place them back in a “dry” pot on the stove. And start mashing over low heat. You want to make sure you allow the steam from the potatoes to escape ๐Ÿ˜‰

ย

Now add the other ingredients.

Add the seasoning, cream cheese, butter, milk and start mashing them together

ย I then go in with a hand mixer – I love smooth mash potatoes but this step is optional

Place mixture into the buttered pan and sprinkle Parmesan Cheese on top

ย Now bake in the oven till golden brown ๐Ÿ™‚ย  This takes about 25 – 30 minutes

Enjoy!
