One way to use something you would otherwise be throwing out, is to hang on to all of your leftover vegetable scraps and make your own Vegetable Stock from it.

Simply throw all of your vegetable scraps into a pot or crockpot along with water and bay leaves or parsley. You will want to have onions, carrots and celery as a part of these scraps. Simmer for about 2 hours on the stove or leave in the crockpot for 5-6 hours.

Then you need to strain the broth, and you can finally throw out the leftover vegetable pieces.

You can store it in the fridge in an air tight container. It can be used for about 4-5 days when stored in the fridge. It can last about 3-4 months if frozen.

Perfect for using with various rice dishes or other recipes that may just call for water but you want to add a little flavor!
