How to Remove Moisture from a Salt Shaker
If you find yourself with a salt shaker full of clumpy, damp salt, just add a few pieces of dry rice and it will absorb the moisture. To prevent this from happening, try to keep the shaker away from the stove when it can get hot and condensation can build up.

It’s incredible how this half-true advice gets passed down the generations of humans.

Raw rice quickly achieves Equilibrium Moisture Content (EMC) at which point it stops absorbing moisture. How does raw rice grains get to EMC? It depends on the surrounding air’s moisture, aka Relative Humidity (RH).

So, unless you’re storing the salt shaker and raw rice in a tight container (tighter than a bread box), you can be sure that your raw rice grains are there for purely decorative purpose only. Keep you salt shaker together with your herbs and spices — in cool, dark storage where RH is kept to a minimum (because it’s cool). Dark storage prevents the herbs and spices (organic leaves and seeds) from oxidizing (spoiling).
