German Potato Salad Recipe

If you did not know I am part German ๐ I have always wanted to make homemade German salad — the only place I have seen traditional German Potato Salad is a cute little restaurant in Big Bear, CA
The big difference between normal potato salad and German potato salad- is the lack of mayo in the German potato salad ๐
My whole family loved this dish — and I love the fact I have another potato recipe…. You can never have too many potato recipe ( that is my Irish side coming out ๐ )
I cannot wait to send the picture above to my dad — he is suppose to move the dog biscuits in the ingredient picture… but totally forgot ๐ hehehehehe
I used Turkey Bacon like normal – it cooks up really well
This salad is also gluten free ๐
This recipe is pretty frugal as well – the potatoes I used are golden potatoes – I got a 5 pound back for $2.98 at Winco — I think the whole dish ( enough for 6 servings) was not more than $3 — which is a perfect price point for me

German Potato Salad Recipe
Ingredients
- 1.5 pound of golden potatoes
- 4 slices of Bacon - cooked and crumbled
- ¼ Cup of White Wine Vinegar
- salt and pepper to taste
- Parsley, chopped ( garnish)
- 2 Tablespoons of chopped onion
Instructions
- In a large stock pot - boil water and place potatoes ( I cut my potatoes into ⅛ths ) cook until the potatoes are semi- cooked --- test with a fork ( the fork can easily go into the potato but the potato is not falling apart )
- Once the potatoes are cooked - drain water -- pour cold water on the potato to stop it from cooking more
- Once the potatoes are cool - place the potatoes in a large mixing bowl
- Add the rest of the ingredients - lightly mix everything together
- Serve and Enjoy
