These crisps are the BOMB!!! My family loved these crisps — even Eric ( and if is difficult for me to get veggies) — one day he will eat a salad …. maybe
I have seen this recipe floating around and I thought it would be fun to try — I make a similar recipe – but I battered the zucchini instead using panko – my family really loved it
For fun I tried frying up some of the zucchini slices before doing the batter – since I am gluten free and panko and the flour ( are totally not gluten free) — and it was actually really fun and yummy — it is really not a recipe though lol
I paired the crisps with my fry sauce — and my family loved the mixture

Everything you will need 🙂 I originally got the recipe from Damn Delicious ( who has some of the best recipes around)
These babies fry up quickly – I am sure you can bake them as well – I would try at 425 for 10 – 12 minutes – flipping once around the 5 – 6 minute mark

Zucchini Parmesan Crisps Recipe
Ingredients
- ½ cup vegetable oil
- 1 cup Panko
- ½ tsp of salt
- ½ tsp of garlic powder
- ¼ tsp of paprika
- ¼ tsp of red pepper flakes
- ½ cup grated Parmesan cheese
- 1 zucchini - thin slices
- ½ cup all-purpose flour
- 1 large eggs, beaten
- ½ Cup of Milk
Instructions
- In a large skillet - heat oil
- Whisk together the milk and egg together
- In a bowl - mix together - paprika, salt, garlic powder, red pepper flakes, parmesan cheese, panko
- Place in separate bowl the flour
- Take each slice - place in the flour - lightly coat
- Then place into the milk and egg mixture
- Then place into the panko
- Fry in the hot oil
- Place onto a paper towel
- Repeat until all the zucchini is turned into awesome crisps
- Enjoy
