Buffalo Chicken Meatballs Recipe

So these is the month for party food – with the BIG GAME coming up I am trying to come up with fun different types of party food that are a different twist on classic favorites
What I love about this recipe is that I adapted my good old chicken meatball recipe
Have you ever made chicken meatballs – it is SOOO good – I love the fact that they warm up great – you get about 20 meatballs from 1 pound of ground chicken or turkey – you can use them for dinner one night
then the next day you can make meatball subs and such — plus it is SOOOO much cheaper than buying the pre- made meatballs – those are INSANELY priced
One fun thing I do with my meatballs to give it a little flavor and moisture is make sure to cut a couple celery stalks into the mixture — really helps give moisture to the meatballs
I also use an egg as well and bread crumbs for a binding agent – I use of course gluten free breadcrumbs
Not much is needed for this recipe – I did use some salt and pepper to season the chicken as well
My dad is the one that made the meatballs 🙂
This recipe does take a while to make though – you can premake the meatballs the night before – but it take a bit to bake

Buffalo Chicken Meatballs Recipe
Ingredients
- 1 Pound of Ground Chicken
- Salt and Pepper
- ¼ Cup of Hot Sauce
- ¼ Cup of Chopped Celery
- ½ Cup of Bread Crumbs
- 1 Egg
- Glaze
- ¼ Cup of Hot Sauce
Instructions
- Preheat oven to 400
- In a bowl mix together - chicken, salt, pepper, hot sauce, celery and bread crumbs
- Make about 20 meatballs and place onto cookie sheet - bake for about 30 minutes - sometimes it takes up to 35 minutes
- Brush the glaze onto the meatballs
- Enjoy
