Can I let you in on a little secret. I LOVE BBQ sauce – it is my favorite condiment by far – though ketchup will always hold a special place in my heart — but it has nothing on a great BBQ sauce 🙂 Yum Yum Yum

 I also love pineapple — if you never tried the combination of BBQ sauce and pineapple it really is a must — especially with a tangy BBQ sauce like KC Masterpiece Original – perfection combination 🙂

Cheesy BBQ Chicken Quesadilla Recipe

Everything you need is above – 5 simple ingredients – this whole dish is done within 10 minutes

So one thing I love to do is take Pineapple chucks ( after I pour off the excess juice) and sauté them in a skillet — I do not use any oil or butter the water in the fruit is enough

The sugar in the pineapple creates this wonderful caramelization

You can cook up some chicken breasts but for this quick snack I bought a pre-cooked chicken — they are usually around $5

I added in some BBQ sauce into the shredded chicken – topped it with some caramelized pineapple – then I will add a “healthy” amount of cheese ( pretty much as much that will fit — I love cheese)

Cook till the tortilla is lightly brown and the cheese is melted

To make this dish gluten free make sure to use corn tortilla — I used flour since I made the dish for my family

Cheesy BBQ Chicken Quesadilla Recipe

Ingredients

  • 4 Flour Tortillas ( Large)
  • 1.5 Cups of Medium Cheddar Cheese
  • 2 Cups of Shredded Chicken
  • ½ Cup of KC Masterpiece BBQ Sauce
  • 1 Cup of Pineapple Chunks - drained

Instructions

  1. In a skillet cook pineapple for about 5 minutes - they are done when they get lightly brown on the outside
  2. Mix chicken and BBQ sauce in a bowl together
  3. Place ¼ of your chicken mixture onto half of the tortilla ( in a hot grill - use a little oil for cooking) add some pineapple on top - add about ⅓ cup of cheese
  4. Fold the tortilla over - cook each side - takes a couple of minutes
  5. Cut and Serve
