What You Need
- 1 cup all-purpose flour for coating
- 1/8 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 pounds chicken, cut into pieces
- 1 tablespoon vegetable oil
- 1/2 onion, chopped
- 2 clove garlic, minced
- 1/2 green bell pepper, chopped
- 7 ounces can diced tomatoes
- 1/4 teaspoon dried oregano
- 1/4 cup white wine
- 1 cup fresh mushrooms ( I did not do this since my husband despises them)
- Penne Pasta ( cooked)
What To Do
In a large plastic bag place pepper, flour, chicken and salt. Shake until every piece of chicken is coated.
Heat oil in large skillet.
Add chicken and cook till sides are brown – remove
Add onions, garlic, bell peppers and cook for 5 minutes. Add tomatoes, oregano; wine. Cover and simmer for 30 minutes.
At the 15 minute mark add chicken to the sauce.
Add mushrooms and let simmer for 10 minutes
Place over pasta and enjoy!
