Sweet Potato Casserole Recipe
The inspiration of this recipe came from the fact I really want to try and do some “different” but flavorful side dish for Fall
The idea for the sweet potato casserole recipe came about when I was taking a Fall walk ( here in Oregon all the leaves are changing color)
This is the tree that inspired me 🙂
I wanted to make a comforting dish that had many layers ( so I thought a perfect idea would be a sweet potato casserole) with a pecan brown sugar topping
Different flavors mixed with different textures equals a beautiful dish just like the different colored leaves creates a beautiful picture
The leaves you see in the “finished product picture” above are from this tree 🙂
Now onto the recipe
I decided to use white sweet potatoes since they tend to be not overly sweet which pairs well with the brown sugar pecan topping
This dish could easily be made gluten – free by using gluten – free flour
You could make this dish in a 9×13 casserole dish but I opted for an 8×8 casserole dish – I love thicker casseroles ( am I the only one?)
My family ( who tries all my recipes) could not get enough of this. It is already slated to be on the Thanksgiving menu !!!
Here is a snapshot of my mom taking a helping 😉 Enjoy the mess in the kitchen ( not my mom but everything around her 😉 )
Here is a closeup shot of the casserole
If you do make this recipe I would love to see it post a picture on instagram use the #budgetsavvydiva so I can find it 🙂
This dish is for 6 – 8
