I grew up eating many home cooked meals —- but at least once a week we would make hamburger helper ( actually I would make it — my parents first allowed me to make easy dishes like this before trying more difficult entrees)

My favorite to make was the lasagna dish — but I thought it was really weird because it did not really taste like lasagna ( you know the really good type with plenty of ricotta and meat)

So I was really happy to try making a homemade version of hamburger helper that is true to lasagna but also REALLY easy to make

I have to put emphasis on easy to make — I love the kitchen but I also love easy to make dishes šŸ™‚ It really comes down to the fact that I love to eat – sooner the food, happier the Sara.

Skillet Lasagna Recipe

This is everything you need – you might wonder why we are using sugar in the recipe – it is important to add a bit of sugar to your tomato sauce – if you do not the tomato sauce can easily be too acidic – which can sauce tummy problems

I find adding a little bit of sugar will fix this problem

The final cost of the dish is about 8 – $10 — however there was enough for 6 large servings — which my family loves ( and I love it too because I do not have to make lunch the next day šŸ˜‰ )

Skillet Lasagna Recipe

Ingredients

  • 1 (28 oz.) can petite diced tomatoes
  • 1 (8 oz.) can tomato sauce
  • 3 tablespoons sugar
  • 2 tablespoon extra-virgin olive oil
  • 3 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 pound ground beef
  • Garlic salt and freshly ground black pepper
  • ¼ Cup of Parsley, Chopped
  • 8 ounces bow-tie pasta (farfalle)
  • 1½ cup shredded mozzarella
  • ½ cup Parmesan cheese
  • 1 cup ricotta cheese

Instructions

  1. In a bowl - pour diced tomatoes and 1 cup of water together - stir - the mixture should equal 4 cups - if it does not add more water till it does - stir in sugar
  2. In a large skillet - heat oil - add garlic - heat for 2 minutes - add beef - cook till brown - pour off excess fat - add seasonings ( red pepper flakes, little pepper and garlic salt)
  3. Add about 2 teaspoons of parsley
  4. Add pasta - even layer
  5. Add tomato mixture - cover and cook for 25 minutes
  6. Add cheeses except ricotta
  7. Once cheese are melted add dollops of ricotta
  8. Cover with lid for 5 minutes for the ricotta to melt a little
  9. Enjoy
