Baked Teriyaki Chicken Recipe

So I have a little story for you today – WAY back in the day my mom and I would go to the Outside Mall in Century City ( which is located in Los Angeles) on a pretty regular basis — we would watch movies at their AMC theater
Well after each trip we would go to this very odd food court ( the mall has a pretty new food court now) but 15 years ago there was this little hole in the wall Teriyaki quick service place – I would get a chicken rice bowl — now that Teriyaki sauce was so good ( I never really been able to replicate it again) but this recipe is pretty darn close
What I like so much about this recipe is if you switch the soy sauce with gluten free soy sauce you can make gluten free Teriyaki sauce ( which is SUPER expensive if you want to buy it in the store)
Also you should already have everything in your pantry right now!
I made the sauce and used a mason jar to save the rest to use on another recipe this week — I love when I can do that
Once the chicken is baked I brushed on more sauce — I paired this dish with green beans and rice

Baked Teriyaki Chicken Recipe
Ingredients
- 2 pounds of chicken breasts or 4 chicken thighs
- 1 Tablespoons of Cornstarch
- 1 tablespoon of cold water
- ½ Cup Sugar
- ½ cup soy sauce
- ¼ cup cider vinegar
- 1 clove garlic, minced
- 1 teaspoon ground ginger
- ¼ teaspoon ground black pepper
Instructions
- Preheat oven to 425 - while the oven is heating
- In a sauce pan - over medium heat - mix - cornstarch, water, soy, sugar, vinegar, garlic, pepper, and ginger
- Brush a small amount of the sauce onto the chicken in a casserole dish
- Bake for 20 - 30 minutes - till the chicken is cooked
- Brush on more sauce
- Enjoy
