If you did not know I am Irish and with being Irish I have always been fond of the potato
I love how inexpensive it is and yummy all at the same time. This recipe has been a staple in my kitchen for years. I try not to load it with fat and calories rather flavor
— oh and a bunch of cheese….
What you Need:
- 1 sticks butter
- 3.5 pounds Yukon gold potatoes ( I grab them when they go on sale)
- One 8-ounce package cream cheese, softened
- 1/2 cup of milk
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon salt
- 1 1/2 teaspoon black pepper
- 1/2 cup of Parmesan Cheese
What to Do:
Preheat the oven to 350 degrees F. Butter your 8×8 Baking Dish
Cut the potatoes into 1/4ths – I leave the skin on you can peel them if you like.
Boil water in a stockpot and give your potatoes a bath!
Leave them for about 20 minutes – test the potato by sticking a knife in it – IF the potato is tender then you know they are done
Drain potatoes – place them back in a “dry” pot on the stove. And start mashing over low heat. You want to make sure you allow the steam from the potatoes to escape
Now add the other ingredients.
Add the seasoning, cream cheese, butter, milk and start mashing them together
I then go in with a hand mixer – I love smooth mash potatoes but this step is optional
Place mixture into the buttered pan and sprinkle Parmesan Cheese on top
Now bake in the oven till golden brown
This takes about 25 – 30 minutes

Oh my gosh they look so good. I have to print this out. My two boys would love this, I mean three cannot for get the hubby.
