I made this dish at my parents house – my dad called me the next day and told me how much they loved it!!! I know they will be making it again since it is SO easy to make 🙂

I really like this dish because it reminds me of the rice skillet meals I use to come up with as a kid – I would cook dinner for the family and I would through a bunch of veggies and rice in a skillet – usually followed with a bit of soy sauce and seasoning

We would serve it with a salad and dinner would be done

I really hope you enjoy this recipe – I really love how the pictures came out – do not worry the recipe is not too spicy

This is everything you will need – I love the fact that there is tons of protein in the dish due to the cheese and black beans so you are not going to miss not having meat in the dish — feel free to add a pound of cooked ground turkey or beef if you would like 🙂

How GOOD does that melted cheese look ?!!! Seriously melted cheese might be my favorite thing in the world – except for caffeine. Melted cheese and caffeine are my two favorite things ( maybe someday I will figure out a way to combine the two — just kidding)

Cheesy Enchilada Rice Skillet Recipe

Ingredients

  • 1 cup uncooked rice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup canned corn kernels, drained
  • 1 cup canned black beans, drained and rinsed
  • 1½ Cup of Red Enchilada Sauce
  • ½ Cup of Green Enchilada Sauce
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • Pinch of Salt and Pepper
  • 2 cups shredded Mexican blend cheese
  • 2 tablespoons chopped fresh cilantro leaves

Instructions

  1. In a large skillet - cook rice according to the instructions on the box
  2. In another large skillet - heat olive oil - add garlic, onion and bell pepper
  3. Cook for 5 minutes
  4. Add rice, salt, pepper, black beans, corn both enchilada sauces, chili powder, cumin
  5. Mix and Wait about 5 minutes
  6. Add cheese to the top
  7. Cover and heat till cheese is completely melted
  8. Garnish with cilantro
  9. Enjoy
