Yes I seriously have searched this a number of times – I grew up on Cracker Barrel when I would go to Pennsylvania each summer. I have made a number of their recipes and I thought it would be fun to tackle their Coca cola cake recipe

Now I know that Cracker Barrel has a chocolate icing – but I thought it would be fun to do something a little different so it is not an exactly a Cracker Barrel Copycat Coca Cola Cake Recipe BUT the cake is spot on – I used a 9×13 pan as you can see below

I just think this Coca cola cake recipe is so perfect – especially since we made the cake from scratch ( if I can do it you can 🙂 )

Cracker Barrel Copycat Coca Cola Cake Recipe
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 cup butter
- 1 cup cola, beverage
- 5 tablespoons unsweetened cocoa powder
- ½ cup buttermilk
- 2 eggs
- 2 teaspoon vanilla
- Frosting -
- 7 ounces marshmallow cream
- Coke Drizzle -
- ½ cup butter
- 3 tablespoons unsweetened cocoa powder
- 9 tablespoons coke
- 2 teaspoons vanilla
- 3.5 cups confectioners' sugar
Instructions
- Preheat oven to 350 - lightly grease a 9x13 pan
- In a large mixing bowl combine flour, sugar, and baking soda
- In a saucepan over low heat - mix butter, cocoa, and coke - mix till it is melted together
- Slowly pour the wet mixture into the dry - add buttermilk, eggs, and vanilla and mix
- Once well mixed pour into the baking dish
- Bake uncovered for 40 minutes
- While the cake is still VERY hot spread the marshmallow fluff - the hot cake will make it easy to spread
- In a saucepan mix butter, cocoa, coke, vanilla and powered sugar - whisk till combined ( this is over low heat ) drizzle on top of the mallow fluff
- Allow cake to fully cool then serve
