What You Need
1.5 – 2 pounds of skinless chicken breast – frozen or thawed
1.5 ounces of taco seasoning ( about one packet worth) – I used my homemade seasoning HERE
1 can ( 10) ounces of Rotel
All your taco fixings – corn or flour tortillas, cheese, sour cream, Chipotle guacamole , lettuce, tomatoes
What To Do
Set your crock pot to low and place taco seasoning, chicken, rotel together – mix.
Set aside for about 6 hours if chicken is frozen if thawed it will be done in about 3 -4 hours. Take two forks and pull-apart the chicken and mix into the awesome juices.
If there is not enough liquid use a little chicken stock.
Enjoy — Simply scoop up the chicken in that tortilla and go topping crazy

This is a favorite of mine! I actually shred the chicken and then add sour cream and mix it all together for the last 30 minutes of cooking. YUMMMM!
Very close to what I have been doing for a while now. I will typically use Penzey’s Chicken Taco seasoning.

Instead of the Rotel I will use 1/2 cup of your favorite red salsa and 1/2 cup of your favorite green salsa
Also, my family likes the spice so I will portion out a can of chipotles and freeze them. I add about 2 peppers with some adobo (frozen) into the crockpot as well. Remove the pepper before shredding.
I wonder if you could do this with ground turkey too? I’ve been trying to find a good taco recipe, since I stopped eating taco bell…but still have a craving for tacos all the time.

This was so easy, perfect for a weeknight meal! TJ’s didn’t have rotel so I used fire roasted diced tomatoes and added another small can of mild green chiles. One packet of seasoning, two chicken breasts and that was all we needed for perfectly seasoned chicken tacos. Topped with shredded cheese, heirloom tomatoes, avocado and a little sour cream. YUM!
Made this yesterday, except instead of rotel I used a jar of salsa. My family went crazy for it!! Put it on at 7 came home at 6, the chicken shredded so easily and was crazy juicy! This will be a staple meal from now on in our home!
Denise – you cooked it for 11 hours? I don’t use my crockpot often because all the recipes seem to be 4-6 hours and I am away from the house about 11 hours. I just want to make sure I read that right … if so I’m trying this one for sure!!
Crockpots with timers are your best friend!
